Memorial Day Weekend Menu

We cannot believe Memorial Day Weekend is here!  The unofficial kickoff to the beginning of Summer!  Let the festivities begin with our holiday weekend menu, to get your BBQ, soirée, block party, whatever event you're having, off to a delicious start.

Summer is upon us.  Fruit salads are refreshing and hydrating.  Here's a fun and flavorful fruit salad that will have your guests coming back for more. I guarantee, there will not be any leftovers after your guests have gotten a taste of this Strawberry Arugula Salad with Watermelon and Feta Cheese.

INGREDIENTS

  • 8 cups arugula
  • 3 cups seedless watermelon, portioned with a melon baller or chopped into 1/2 inch pieces
  • 3 cups strawberries, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup fresh basil
  • 1/2 cup crumbled feta cheese or more to taste
  • 1/4 cup sliced almonds
  • 1/3 cup fruity extra virgin olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 teaspoon honey, plus more to taste
  • 1/4 teaspoon each kosher salt and freshly ground pepper

Next On The Menu...

 

A classic burger slider using ground turkey instead of ground beef.  The Turkey Burger Slider with Mini Brioche Buns, is the perfect finger food for your guests.

INGREDIENTS

  • 1 1/2 pounds ground turkey
  • 1/3 cup fresh parsley, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 2 garlic cloves, minced
  • 2 shallots, minced
  • 1 egg yolk
  • Sea Salt
  • Fresh cracked pepper 
  • 2 tablespoons olive oil
  • 12 mini brioche buns
  • 12 small lettuce leaves
  • 12 tomato slices
  • 1 cup thinly sliced red onions or yellow onions
  • Mayonnaise
  • Mustard
  • Ketchup

    DIRECTIONS 

    Mix together the turkey, parsley, cumin, paprika, garlic, shallots and egg yolk in a large bowl. Sprinkle with salt and pepper and mix. Divide the turkey mixture into 12 equal portions and, using your hands, shape into 12 small burgers about 3 1/2 inches wide. Heat the oil in a pan and cook the burgers until a thermometer inserted into the center registers 165 degrees F, about 3 minutes per side. Caramelize yellow onions on stovetop for 5 minutes. Serve the burgers on the mini brioche buns with the lettuce, tomato and red onions or caramelized onions. Garnish with mayonnaise, mustard and ketchup to your liking.
